For the past few years, my husband and I have bought 1/2 a bison to put in the freezer for the winter months. Of course, being half a bison and us being two people, it usually lasts much longer than just the winter, which is perfectly fine come summer since there are usually some great steak cuts and ground meat for burgers.
The problem is, I’m not a huge steak person, BUT when I noticed that the butcher included quite a few filet-type cuts, I knew I had to do something special with them!
Steak Marinade

1 tbsp. olive oil
1 tbsp. Worcestershire sauce
1 tbsp. Balsamic vinegar
1 tbsp. soya sauce
1 tsp. minced garlic (I buy the pre-minced stuff in winter)
1 tsp. yellow mustard
1/2 tsp. ground pepper
1/2 tsp. onion powder
In a heavy-duty ziploc bag, toss in all your ingredients. It’ll look pretty uneventful, like this:
THEN, toss in your steaks. (I’m one of those awesome people who take out one very large steak and one very small steak and leave it up to my husband to cook. He likes a challenge.) Zip up the bag and start smushing them around with the marinade and let it sit for 30 minutes, up to overnight. I tossed mine in around noon for dinner.
Toss on the BBQ and cook to your desired temperature. I like mine medium.
Of course, every good steak needs a good side and since I was really lacking in vegetables in the fridge, I thought I’d make some super-good potatoes to go with the super-good steak. Everyone loves a good potato dish!
Cheesy Potatoes
1 lb. potatoes
3/4 cup white cheddar (old)
1/2 cup sour cream
salt and pepper, for seasoning
1/2 tsp. onion powder
1/2 cup white cheddar (for topping)
Cook your potatoes by either baking or boiling until done. You can either grate your pototoes now, or throw them in the food processor, skin and all, until they’re chopped up.
Transfer potatoes to a bowl and add in cheese, sour cream, salt, pepper, and onion powder, mixing until combined. Scoop potatoes into a baking dish, making sure not to press down on the potatoes. Top with remaining cheese.
Bake at 350 degrees for about 30 minutes, or until golden brown.
