I absolutely LOVE Larabars. They are my favourite kind of bar because they are made so simply. I mean, just dates, nuts, dried fruit, and maybe some other additions like chocolate, or coconut, or something? Sign me up.
The only downside is that they are so freaking expensive. My wallet can’t take it!
I love making these at home — so much so that my food processor has seen better days. From making these bars, to making homemade nut butters, my food processor is at the point where I need to put all my weight on the lid so it doesn’t fly off while mixing something. But I love it and continue to use it. I can’t part with it yet!
These started out as bars, but I prefer forming them into balls so they’re a little easier to handle. I love having them as an afternoon pick-me-up, and I’ll even throw them in the husband’s lunch for a healthier granola bar alternative for him. There are so many recipes out there that it’s easy to customize your bar to your liking. I plan on making MANY different flavours!
Chocolate Cherry Coconut Larabars
Makes 13 balls
1 cup pitted dates
1 cup raisins (I used cherry craisins)
2.5 tbsp. cocoa powder
1 1/3 cup almonds
1/4 cup coconut
Toss all the ingredients in the food processor and combine until you can form balls. Form into 13 balls and store in an airtight container. Enjoy!
